Vineyard & Production

Upon arrival at the cellar, the whole bunches are gently pressed, and the unclarified juice is transferred directly to French oak barrels (a proportion of which are new) for spontaneous fermentation using indigenous wild yeasts. The wine undergoes regular lees stirring (battonage) over several months to build luxurious mid-palate creaminess, followed by extended maturation in oak prior to final blending and bottling.
