Vineyard & Production

Following spontaneous wild yeast fermentation in temperature-controlled vats, the wine undergoes natural malolactic fermentation in oak. It is aged for sixteen months, utilizing a combination of small French oak barriques, large 5,000-litre foudres, and unglazed concrete eggs to refine the tannins while preserving fruit clarity before minimal filtration prior to bottling.

In the glass, it displays a deep violet-red colour with dark crimson edges. The nose is rich, layered, and hauntingly complex, opening with vibrant notes of fresh blueberries, wild cassis, and black cherry jam, interwoven with cedar wood, dark chocolate, sweet tobacco, ground black pepper, and fresh juniper.
