Vineyard & Production

Upon arrival at the cellar, the fruit is destemmed and gently crushed into open-top concrete vats. Fermentation takes place with traditional manual punch-downs occurring every two hours to extract deep ruby colour and rich, complex tannins. Following malolactic fermentation in stainless steel, the wine is transferred to French oak barriques (approximately fifty percent new) for eighteen to twenty-four months of patient maturation before blending and bottling.
